Cauliflower Cutlets

Cauliflower remains a top contender in my list of favorite vegetables, thanks to its delightful taste and numerous health benefits. It's a versatile ingredient that is accessible throughout the year and holds a permanent spot in my weekly menu rotation. These cauliflower cutlets offer a tempting option for a quick snack or a tasty side dish. While they can be pan-fried to achieve a rich golden color and great crispiness, I lean towards the lighter alternative for a healthier twist. The combination of cauliflower, cheese, and chickpea flour results in a satisfying flavor profile that makes these cutlets a delightful treat anytime. It will definitely be on my Easter menu due to its popularity among some of my family members who prefer not to have meat dishes during our gatherings.

Cauliflower Cutlets

Cook Time: 15 minutes

Yield: 16 cutlets

Ingredients:

  • 1 large cauliflower

  • 2 large eggs

  • 100 g shredded cheese, Asiago, Manchego or any of your liking

  • 1/2 cup chives or green onion, chopped

  • 5 tablespoons chickpea flour or oat flour

  • 1 tsp sea salt

  • 2 tablespoons avocado oil for brushing

Instructions:

  1. Wash and cut the cauliflower into medium size pieces.

  2. In a big pot, bring water seasoned with salt to a boil. Add cauliflower and cook until tender, about 5 to 10 minutes. Be careful not to overcook.

  3. Drain off water, then mash cauliflower with potato masher.

  4. Add the eggs, cheese, chopped chives, and chickpea flour into the cauliflower mixture. Ensure to season the mixture with a pinch of sea salt for extra flavor. Gently stir all the ingredients together until they are thoroughly combined, creating a delicious and nutritious mixture ready for cooking.

  5. Preheat oven to 200ºc or 392ºF.

  6. Line baking pan with parchment paper. Lightly spray with oil.

  7. Form small cutlets with your hands, shaping the cauliflower mixture into 16 cutlets. To prevent sticking, apply a small amount of oil to your hands before shaping the cutlets.

  8. Lay all cutlets inside of baking pan. Brush each cutlet with oil and bake it in the oven for 15 minutes or until lightly golden.

  9. Serve on its own as a vegetarian entree, allowing its vibrant flavors to take center stage, or as a delectable condiment alongside grilled meats or flaky fish. Personally, I find it most delightful as a convenient and delicious finger food option for any occasion.
