Cream of Broccoli Soup

Yield: 8 servings

Ingredients:

  • 5 cups fresh broccoli, chopped (flowering head, stalks and leaves included, peel the )

  • 1 shallot, diced

  • 5 garlic cloves, minced or diced

  • 2 stalks celery, diced

  • 5 tablespoons unsalted butter

  • 3 cups vegetable broth

  • 3 tablespoons flour

  • 2 cups 2% milk

  • pinch of white pepper

  • parsley for garnish

Instructions:

  1. In a large saucepan, heat up 2 tablespoons of butter over medium heat. Add diced onion, garlic and celery.

  2. Cook for 5 minutes. Add vegetable broth and bring it all to boil.

  3. When preparing broccoli, make sure to carefully remove the tougher outer layer of the stem to ensure a more pleasant texture when cooked.

  4. Reduce heat and add chopped broccoli. Cover the pot and simmer for 10 minutes.

  5. Remove the saucepan from the heat, then using an immersion blender, emulsify all the ingredients together until well combined. Set the mixture aside.

  6. In the small saucepan, start by carefully melting 3 tablespoons of butter over medium-low heat. Following that, gently stir in the flour and a pinch of white pepper, ensuring the flour combines with the butter to form a roux. Gradually pour in the milk, continuing to stir constantly until the mixture thickens and starts to bubble. Add this velvety mixture into the soup, optionally straining it to achieve a smoother texture, and stir thoroughly until all ingredients are fully mixed.

  7. Serve hot and enjoy it
