Austrian Garlic Soup

This delicious and nutritious soup is a favorite of my friend Uli, rooted in her fond childhood memories from a small town in Austria. It's easy to prepare, making it perfect for enjoying after the busy Christmas celebrations, especially with leftover turkey, chicken, or beef bones, or even a rich mushroom broth. This soup not only offers comfort when feeling under the weather but can also help prevent illness. Following the holiday rush, a filling and healthy meal is important for starting the new year right. Garlic, a key ingredient known for its health benefits, adds great flavor along with crushed caraway seeds. The strength of the broth matters; while some prefer a hearty meat base, vegetable or mushroom broth can also be satisfying. Be sure to have fresh sourdough bread to enjoy with this comforting soup. AUSTRIAN GARLIC SOUP

Preparation Time: 30 minutes plus time to make your own broth

Cook Time: 1 hour

Yield: 5 litres

Ingredients:

  • 4 litres turkey, chicken, beef or mushroom broth

  • 125 ml dried mushrooms, presoaked in hot water, chopped

  • 100 g fresh garlic, chopped

  • 250 g sweet or Spanish onion, chopped

  • 60 g shallots, chopped

  • 60 ml of goose, turkey, or beef dripping for a stronger flavor; butter or oil can be used for a milder taste.

  • 30 g flour

  • 125 g sweet potatoes, chopped

  • 125 g carrots, chopped

  • 100 g celery stalk, chopped

  • 600 g Yukon Gold potatoes, peeled and chopped

  • 1/2 fresh parsley, chopped

  • 2 tsp allspice, ground

  • 2 tsp caraway seeds, crushed

  • sea salt and white pepper as per taste

  • Sourdough bread as a condiment

Instructions:

  1. Prepare the broth of your choice, whether it's a rich chicken, hearty beef, or a mushroom vegetable broth, and then carefully pour it into a 5-litre stockpot, making sure to leave some space for additional ingredients you will add later.

  2. Soak the mushrooms in water until soft. Chop them and add to the broth with diced sweet potatoes, chopped celery, carrots and Yukon Gold potatoes. Bring the broth to a gentle boil, then lower the heat and let it simmer slowly to blend the flavors. Cook for 30 minutes.

  3. Melt the drippings in a medium saucepan over medium heat. Sauté chopped garlic, onions, and shallots until golden brown to bring out their sweetness and aroma. Add allspice and crushed caraway seeds, then mix in the flour until combined. Cook for about 3 minutes until the flour is fully blended. Gradually pour in 2 cups of broth, mixing well. Once combined, bring to a boil and transfer to the pot with the broth.

  4. Bring the soup to boil, then reduce the heat and let it simmer until the flavours are blended and all vegetables are soft. Season the soup with sea salt and white pepper. Let the soup cook for at least 30 minutes.

  5. Serve with sourdough bread or croutons.
