Milk Bath Buns

MILK BATH BUNS

Preparation Time: 30 minutes, both restings: 3-4 hours

Baking Time: 20

Yield: 18 small buns

EQUIPMENT: Danish whisk and a 38cm x 24cm baking pan lined with parchment paper.

Ingredients: for the dough

  • 500 g all purpose flour

  • 20 g fresh yeast or 8 g active dry yeast

  • 40 g granulated sugar

  • 2 eggs, room temperature

  • 50 g unsalted butter, melted

  • 250 ml lukewarm milk

  • 1 tsp pure vanilla essence

  • pinch of salt

Ingredients: for the glaze

  • 150 g milk

  • 75 g fine sugar

Instructions:

  1. In a small bowl dissolve the yeast in ¼ cup lukewarm milk, add 1 tsp of sugar and 2 tablespoon of flour. Leave the mixture to rise in warm place for 5-10 minutes.

  2. Mix remaining milk with eggs, sugar and vanilla extract.

  3. Sift flour with salt into a warm bowl. Add yeast and egg mixtures. Stir well with danish whisk until all ingredients are well combined. Now, add melted butter. Keep on blending until everything comes together.

  4. In just a minute or two, the dough will be ready to turn out onto the counter to knead.

  5. Turn dough onto a floured counter, work the dough with your hands for 5 minutes, or until it is smooth and elastic.

  6. Place the dough in a warm, lightly greased bowl, sprinkle surface lightly with flour, cover with a baking cloth , and leave to rise in a warm place for 2 hours or until dough has doubled in size.

  7. Set oven to heat up at 180°C or 375°F.

  8. Cut the dough into 18 equal pieces. Form each piece into small round buns and put them on a greased baking sheet with parchment paper. Cover and let them rise in a warm place for an hour or until double in size.

  9. Heat milk for the glaze in a small non-stick pan over low heat. Add sugar and stir until it fully dissolves and becomes smooth.

  10. Glaze the buns generously to ensure an even coating. Bake them in the oven for about 20 minutes, or until they become golden brown underneath and appear golden and plump on the top.

  11. Take buns out of oven and glaze again while still hot. Cool on wire racks.
