Potato Dumplings “Kopytka”

Potato dumplings, also known as "kopytka," are a beloved Polish dish that never fails to delight the taste buds. Potato Dumplings “Kopytka”

Preparation Time: 30 minutes

Cook Time: 5-10 minutes

Yield: 10 servings (130 g portion each)

Ingredients:

  • 1 kg all purpose potatoes

  • 350 g flour

  • 2 eggs

  • 1 tablespoon butter

  • salt

Instructions:

  1. Wash potatoes, but do not peel them. Boil in skin until tender.

  2. Peel the potatoes while they still hot, and force them through a potato ricer.

  3. Add butter, flour and an egg. Knead the mixture to form a soft and smooth dough.

  4. Divide dough into two pieces. Roll each piece into a long log and cut into 3x2 cm pieces that resemble little hooves.

  5. Makes sure to dust your working table with plenty of flour to prevent from dough sticking to the table. I like using my pizza peel for easier handling of dumplings.

  6. Drop the kopytka into a large quantity of boiling salted water. When they float to the surface , let them boil for 15 seconds, then remove with a slotted spoon.

  7. Serve 130 g of kopytka topped with beurre noisette (brown butter) and grated cheese; with Hungarian Goulash; or melted bacon bits with sautéed onion.
