Roasted Paprika Potatoes with Caraway seeds-Смажена картопля паприка з насінням кмину

Caraway seeds are the oldest cultivated spices. In latin also called carum carvi, caraway seeds have a pleasantly sweet but slightly biting flavour and a spicy aroma. They have many health benefits including promote digestive health. This spice is one the most important ingredients of Ukrainian traditional cooking.

Yield: 12 servings x 125 g each portion

Ingredients:

  • 1.5 kg baking potatoes, peeled and cut into wedges (weight after potatoes being peeled)

  • 3 teaspoons caraway seeds

  • 2 teaspoons paprika spice

  • 1 teaspoon ground white pepper

  • 2 teaspoons sea salt

  • 6 tablespoons of sunflower or olive oil

Instructions:

  1. Peel the potatoes. Rinse them well. Drain and let dry.

  2. Cut each potato into 6 wedges. Don’t place them in the water.

  3. Toss the potatoes in the oil and all the spices.

  4. Arrange in an even single layer on a baking sheet lined with parchment paper.

  5. Bake at 400°F or 205°C until the potatoes are tender, about 45 minutes

  6. Serve immediately with you favorite meal such as Chicken Kyiv
