Continental Wholesome Waffles

Continental cuisine specifically denotes the culinary traditions originating from the European continent, with a particular emphasis on the rich and diverse flavors of the Mediterranean regions, such as France and Italy, alongside other notable culinary areas like Spain, Portugal, and Germany. It's not just the European continent that inspires this recipe; it also pays homage to the other six continents, underscoring their equal significance in the world of gastronomy.

The Earth is home to seven incredible continents, each with its own unique blend of cultures, landscapes, and natural wonders. From the vast plains of Africa to the frozen expanses of Antarctica, the bustling cities of Asia to the ancient charm of Europe, the diverse beauty of Australia/Oceania to the stunning wilderness of North and South America, the planet holds an astonishing array of experiences waiting to be explored.

My personal home library is a great escape from our Daily World News. While researching different recipes for the waffles, I came across some intriguing recipes in the Presidential Cookbook adopted from the White House Cook book 1908, copyright by The Saalfield Publishing Company in Akron, Ohio. There are seven recipes as many as the number of continents on our planet Earth: Regular Waffles, Continental Hotel Waffles, Newport Waffles, Cream Waffles, Rice Waffles No.1, Rice Waffles No.2 and German Waffles.

The Continental Hotel Waffles recipe as follows:” Put into one quart of sifted flour three teaspoons of baking powder, one teaspoon of salt, one of sugar, all thoroughly stirred and sifted together: add a tablespoon of melted butter, six well-beaten eggs, and a pint of sweet milk: cook in waffle-irons, heated and well greased. Serve hot.”

Waffles also called griddle cakes or hot cakes, are made from pourable batters. They are made on a special tool named a waffle iron. Waffles batters can be leavened by yeasts, baking powder or baking soda. This simple recipe has been enhanced with flaxseed meal and oat bran to ensure that we get enough fiber in our daily diet. Perfect choice for Sunday morning breakfast. Kids will have fun eating them if you create a waffle bar with selection of fresh fruits, warm maple syrup, blueberry syrup, plain yogurt,cfruit preserves, quark cheese, whipped cream, flaxseed meal, grinded nuts, chocolate chips etc. This batter can be made the night before. This recipe is using beaten egg whites which would have to be incorporated into the batter just before making them.

Beloved by Canadians from coast to coast, waffles remain one of the most popular first-meal-of-the day (and sometimes dinner) favourites. Crisp and golden on the outside, light and airy inside, it’s a classic dish most often enjoyed dripping with sweet butter and maple syrup.

Continental Wholesome Waffles

Preparation Time: 15 minutes

Cook Time: 3-4 minutes (depending on the waffle iron)

Yield: 20 waffles

Ingredients:

  • 1 cups all purpose flour

  • 1 cup whole wheat flour

  • 1 tablespoon flaxseed meal

  • 1 tablespoon oat bran

  • 2 large eggs

  • 2 cups milk

  • 4 tsp baking powder

  • pinch of salt

  • 1 teaspoon sugar

  • 1 tsp pure vanilla essence

  • 1/4 cup melted butter

  • extra butter or oil for brushing the waffle iron

  • waffle bar condiments: fresh cut fruits, fresh whipped cream or quark cheese or yogurt, maple syrup, blueberry syrup, dandelion syrup or honey etc

Instructions:

  1. Mix together the flours, salt, baking powder, flaxseed meal and oat bran.

  2. Mix the egg yolks, milk, and melted butter.

  3. Add the liquid ingredients to the dry ingredients. Mix just until the dry ingredients are thoroughly moistened. Do not over mix.

  4. Whip the egg whites until they form soft peaks. Add sugar and whip until stiff peaks form.

  5. Fold the egg whites into the batter.

  6. Preheat the the waffle iron. Grease well the inside with melted butter or oil.

  7. Pour enough batter to almost cover the surface with a thin layer. Close the iron.

  8. Cook waffles until signal light indicates they are done or until the steam no longer comes out.

  9. Remove from the iron and serve immediately. Waffles lose their crispness very quickly so if you need to wait till they are done, place them on the oven rack in the warm oven, making sure the heat circulates around them —never place them on a sheet pan, where they'll trap that steam and go soggy on the bottom.

  10. Serve waffles with different condiments where everyone can make their own masterpieces.
