Boneless Pork Chops in Mushroom Sauce Recipe

Yield: 5 x 150 g servings
Ingredients:
5 x duBreton organic boneless pork loin chops, centre cut (weight approximately 750 g)
Sea salt, white pepper and garlic powder, to season the meat
2 tablespoons olive oil
1 medium-sized onion, finely chopped
2 cloves of garlic, minced
1 tsp sweet paprika
250 g fresh brown mushrooms, washed-dried-sliced
1 cup chicken or vegetable broth
1 cup heavy cream
2 tablespoons fresh parsley, chopped
Instructions:
Tenderize pork chops with a meat mallet to soften the meat and make it even. Cover each chop with plastic or wax paper to avoid splattering. Gently pound with the mallet to prevent tearing. Cut each chop in two for smaller pieces. Season with salt, pepper, and garlic for better taste when cooking.
Heat the olive oil in a skillet over medium-high heat. Once the oil is hot, carefully place the pork chops into the skillet. Cook for about 5 minutes on each side or until they are beautifully browned. Remove the pork chops from the skillet and set them aside on a separate plate.
In the same skillet, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and the garlic becomes fragrant. This will take around 2-3 minutes. Add 1 tsp of paprika and gently mix with other ingredients.
Add the sliced mushrooms to the skillet and cook until they start to release their moisture and become tender. This will usually take around 5 minutes. Make sure to stir occasionally to prevent them from sticking to the pan.
Add the chicken broth, let it simmer, then cook for 3-4 minutes to blend flavors.
Reduce the heat to low and add the heavy cream to the skillet. Stir well to combine all the ingredients. Let the sauce simmer gently for 5 minutes, allowing it to thicken slightly.
Return the cooked pork chops to the skillet and spoon some of the mushroom sauce over them. Allow the pork chops to simmer in the sauce covered with the lid for an additional 15 minutes. This will ensure that the pork is cooked through and absorbs the flavors of the mushroom sauce.
Once the pork chops are cooked to perfection, sprinkle the freshly chopped parsley over the dish. This will add a lovely touch of freshness and color.
Serve on the bed of new harvested boiled potatoes or rice complemented with green and wax beans. Garnish with parsley.
