Slow Cooked Brisket

Slow Cooked Brisket Recipe

Cook Time: 2 hours

Yield: 4-5 servings

Ingredients:

  • 1 kg fresh brisket

  • mirepoix: 1 fresh carrots, 1 fresh medium onion, 1 fresh celery stalk (all coarsely chopped)

  • 2 garlic cloves, finely chopped

  • 1 bay leaf

  • 2 peppercorns, crushed

  • 2 tsps sea salt

  • 2 tsps natural smoked paprika

  • 1 tablespoon olive oil

  • 250ml filtered water or red or white dry wine

  • green onion for garnish

Instructions:

  1. Rub the fresh brisket with all spices, salt and olive oil. Let it marinate for 1 hour in the room temperature.

  2. In meantime warm up the oven to 250 °F or 122°C.

  3. Place the mirepoix on the bottom of the Cast Iron Dutch Oven 4Q/3.8L Round Cocotte.

  4. Place brisket on the top of mirepoix and pour enough water to cover vegetables only, cover it with the lid.

  5. Place the cast iron pot into the oven. Let it cook for 2 hours or until the meat is tender when tested with a fork.

  6. To serve, cut the meat into thin slices across the grain and smother with remaining sauce.

  7. Serve with boiled potatoes and sautéed cabbage.

  8. Garnish with fresh green onions.
