Dadel en Noten Koek - Date Nut Cake -

Dadel en Noten Koek, also known as Date Nut Cake, is a traditional Dutch dessert that combines the rich sweetness of dates with the crunch of various nuts. I found this recipe inside of the Modern Encyclopedia of Cooking Recipe book by Meta Given which has been printed in 1942 - only 16, 000 copies.. it is not part of the recipe book but rather the original owner of the book left her recipe inside. This recipe is typed by very old typewriter and it is in Dutch. By examining the quality of the paper used , the recipe must be at least 60 years old or more..

Ingredients:

·       1.5 cup chopped dates

·       1.5  tsp baking soda

·       1 1/8 cup boiling water

·       2 eggs

. 1 ½ tsp sea salt

·       1 1/8 light brown sugar

·       1 ½ tsp vanilla essence

·       2 ¼ cup flour

·       1 ½ tsp baking powder

·       1 1/8 cup chopped walnuts

·       1/3 cup melted butter

Equipment: Loaf Pan

Instructions:

  1. Sprinkle the soda over the chopped dates in a bowl and pour the boiling water over it, stir well and let cool.

  2. Beat the eggs and gradually add the sugar, beating all the time.

  3. Add salt and vanilla. Now stir this mixture into the dates.

  4. Sift the dry ingredients and add to the mixture with the nuts, then the cooled melted butter, and stir everything well.

  5. Pour batter into a greased loaf pan and bake in the oven for 1 to 1.5 hours at 325 degrees.
