Soaking Cashews: 3 hours

Yield: 8 servings

Ingredients: Crust

  •  1 cup walnuts

  • 3/4 cup pumpkin seeds

  • 1/2 cup soft dates, pitted

 Ingredients: Filling

  •  3/4 cup raw cashews, soaked for 3 hours

  • 1/2 tsp lemon peel zest

  • 1/2 tsp lemon juice

  • 1/2 tsp pure vanilla extract

  • 1/2 ripe banana

  • 2 tablespoons birch sugar (xylitol)

    3/4 cup fresh blueberries

Ingredients: Top Garnish

  • 1/2 cup fresh blueberries

  • 1/2 cup fresh raspberries/small strawberries

Instructions:

  1. To prepare the crust, begin by combining all three ingredients in a food processor. Process the mixture until it reaches a medium ground consistency or until it holds together well. If needed, add 1 tablespoon of water to help the mixture bind. Once combined, firmly press the crust into a 22 cm pie plate that has been lined with saran wrap for convenient removal. After preparing the crust, refrigerate it while you move on to creating the filling.

  2. To prepare the filling, start by blending the drained cashews, lemon zest and juice, vanilla extract, and birch sugar in a high-speed blender until it reaches a smooth and creamy consistency. Then, introduce the banana and blueberries into the mix, blending until they meld seamlessly to create a delightful and creamy texture. Once done, generously spread this delectable filling on top of the crust.

  3. To decorate the top of the berry pie with a beautiful and enticing display, carefully arrange the fresh, vibrant berries in concentric circles on the surface of the luscious filling.
