Frangipane Filling Recipe:

Preparation Time: 20 minutes

Yield: approximately 900 g

Ingredients:

  • 240 g soft unsalted butter

  • 240 g sugar

  • 240 g almond flour

  • 30 g all purpose flour

  • 3 large eggs

  • 1/4 cup apricot brandy or cognac

Instructions:

  1. In a medium size bowl cream together butter with sugar until very light. While mixer is operating, add eggs. Stir in the almond and all purpose flours.

  2. Finally, add apricot brandy and continue to mix for 2 minutes.

  3. Refrigerate the almond paste well covered until ready to use.
