Fruit Compote- Kompot

Compote is part of culinary cultures of many countries in Central, Eastern, Southern Europe and Middle East. It could be served in a form of a stewed fruit or as a refreshing beverage.

Compote or compôte (French for mixture) is a dessert originating from medieval Europe, made of whole or pieces of fruit in sugar syrup. Whole fruits are cooked in water with sugar and spices. The syrup may be seasoned with vanilla, lemon or orange peel, cinnamon sticks or powder, cloves, other spices, ground almonds, grated coconut, candied fruit or raisins. The compote is served either warm or cold.

Kompot or compote is a non-alcoholic sweet beverage that may be served hot or cold, depending on tradition and season. It is obtained by cooking fruit such as strawberries, apricots, peaches, apples, raspberries, rhubarb, plums, or sour cherries in a large volume of water, often together with sugar or raisins as additional sweeteners. Sometimes different spices such as vanilla or cinnamon are added for additional flavour, especially in winter when kompot is usually served hot. Kompot is popular in Central and Eastern European countries as well as in Southern Europe.

The consumption of compote has been declining since the 1980s. and it has been replaced by high in sugar content fruit juice and soft drinks.

I love to share this recipe with you and I promise there will be no sugar added. I know the recipe from my childhood. It is very refreshing and great for hot summer days. Best compote is made from leftover fruits. During winter months, compote could be made from dry or frozen fruits.

Fruit Compote- Kompot Recipe

Yield: 2 L (125ml servings)

Ingredients: use 5 L stock pot

  • 2 bosc pears, diced (unpeeled)-important ingredient as it will sweeten the compote naturally- you can also use dried pears

  • 2 apples, diced (unpeeled)

  • 1 cup strawberries

  • 1/2 cup cranberries or rhubarb or sour cherries or red currants

  • 2 L filtered water

Instructions:

  1. Wash all fruits and cut in to smaller pieces.

  2. Place fruits in a pan and bring to boil on medium heat.

  3. Once bubbling, reduce heat slightly and use a wooden spoon to muddle and slightly mash the fruit.

  4. Continue cooking over medium-low heat for 10-12 minutes, occasionally mashing fruit to combine.

  5. Remove from heat and let it cool thoroughly.

  6. Serve compote in tall glasses with spoons for scooping up the fruit at the bottom.
