MEATLOAF

A meal that pleases everyone at home, suits different tastes, and brings the family together at the table. All you need is some good quality beef and pork, preferably sourced from organic farms for the best flavor and health benefits. If you wish to mix things up, you can easily substitute the pork for tender lamb. Additionally, my dishes always include mushrooms, as they are an important addition to our immune system. Varieties such as shiitake, chanterelles, or portabella mushrooms provide a lovely twist to this scrumptious dish. Don’t forget to include some hearty sourdough bread, which will not only complement the other flavors beautifully but also help to moisten the overall dish significantly. Another crucial ingredient that will ensure the meatloaf stays well moist is water; however, keep in mind that an excessive amount of liquid will transform into delicious jus. This flavorful jus is perfect for a light drizzle over the meatloaf, enhancing both its taste and presentation.

I prefer using baking clay roasters in my cooking because they add extra flavor to my dishes. These handmade terracotta pots let food cook slowly in its own juices, improving taste and texture. Their even heat distribution helps ensure meals are cooked perfectly every time.

Meatloaf

Equipment: Clay Roaster or clay cooking pan

Yield: 12 servings

Ingredients:

  • 1 kg ground organic lean beef

  • 500 g ground organic pork

  • 2 shallots, finely chopped

  • 3 garlic cloves, chopped

  • 1 cup milk or tomato juice if you're lactose intolerant

  • 1 cup cold water

  • 3 slices of sourdough bread or rye bread, diced

  • 2 cups fresh shiitake mushrooms, thinly sliced

  • 2 eggs, beaten

  • 2 tablespoons fresh parsley, chopped

  • 1 tablespoon fresh thyme, chopped

  • 2 tablespoons soy sauce

  • 1 tsp sea salt

  • 1 tsp sweet paprika

  • 1 tsp ground white pepper

  • 2 tablespoons of oil

Instructions:

  1. In a large bowl, soak the bread in milk until it's soft and has absorbed the liquid. Once soaked, add the eggs, spices, fresh herbs, sea salt, and soy sauce. Set aside.

  2. Heat oil in a skillet, then add chopped garlic, shallots, and sliced shiitake mushrooms. Sauté for about 5 minutes until fragrant and tender. Set aside to cool for 5 minutes before using.

  3. Combine the ground beef and pork with the egg mixture, the sautéed mushrooms and onion mixture, and a cup of water until everything is mixed well and the seasoning is evenly spread for great flavor.

  4. Preheat the oven to 350ºF (177ºC).

  5. Lightly grease the clay roaster to avoid sticking. Press the meatloaf mixture into the pan to create a smooth, even loaf. Bake it covered for about 1 hour, then uncover for 15 to 30 minutes to brown the top and create a tasty crust. Check the internal temperature to ensure it's safe to eat— it should reach at least 165ºF or 74ºC.

  6. Remove the meatloaf from the oven and let it rest for 10 minutes. Then, slice it up and serve!
