Sweet Cheese Brioche Buns

Bake Time: 15 minutes

Yield: 12 large ( smaller version 16 pieces)

Ingredients:

  • 500 g all purpose flour

  • 20 g fresh yeast or 8 g active dry yeast

  • 40 g granulated sugar

  • 2 eggs, room temperature

  • 50 g unsalted butter, melted

  • 250 ml lukewarm milk

  • 1 tsp pure vanilla essence

  • pinch of salt

Cheese filling:

  • 350 g quark cheese or farmer’s cheese filling, smooth consistency

  • 3 tablespoons granulated sugar

  • 1 egg yolk

  • 1 tsp pure vanilla extract

Egg wash:

  • 1 whole egg

  • 1 tablespoon of water

Glaze:

  • 1 cup of icing sugar

  • lemon juice from 1/2 lemon

  • 1 tablespoon candied orange peel(optional)

Instructions:

  1. In a small bowl dissolve the yeast in ¼ cup lukewarm milk, add 1 tsp of sugar and 2 tablespoon of flour. Leave the mixture to rise in warm place for 5-10 minutes.

  2. Mix remaining milk with eggs, sugar and vanilla extract.

  3. Sift flour with salt into a warm bowl. Add yeast and egg mixtures. Stir well with danish whisk until all ingredients are well combined. Now, add melted butter. Keep on blending until everything comes together.

  4. In just a minute or two, the dough will be ready to turn out onto the counter to knead.

  5. Turn dough onto a floured counter, work the dough with your hands for 5 minutes, or until it is smooth and elastic.(Kneading is done by pushing the dough away from you and drawing it back with the fingers.)

  6. Place the dough in a warm, lightly greased bowl, sprinkle surface lightly with flour, cover with a damp towel, and leave to rise in a warm place for 1.5 hours or until dough has doubled in size.

  7. Set oven to heat up at 200°C or 390°F.

  8. To make the cheese filling: combine cheese with egg yolk, sugar and vanilla essence.

  9. Divide the dough into 12 equal pieces. Shape each piece into a small round buns and place them on a greased baking sheet. Cover and let rise again in a warm place for 30 minutes.

  10. Make a dent in the middle of each bun using a glass or small cup leaving a small edge.

  11. Fill each hollow with cheese filling, then brush edges with egg wash.

  12. Bake for 15 minutes or until golden-brown.

  13. Cool slightly,then place on the wire rack to cool.

  14. Lightly decorate each brioche (kołacz) with glaze or leave it plain.
