❤️Valentine’s Day Truffles

Here's proof that you can satisfy your sweet cravings while maintaining a nutritious diet. Delight in our selection of gluten-free and vegan truffles suitable for all celebrations. Treat yourself to the effortless creation of these luscious truffles without the need for baking. These delightful delicacies are not only free of gluten but also entirely vegan. They serve as a perfect present for your loved one on Valentine’s Day!

YIELD: 70 pieces

Ingredients:

  • 500 ml tahini

  • 1 cup maple syrup or honey

  • 2 cups almond or hazelnut flour

  • 4 cups 72% dark chocolate, chopped into pea-sized pieces

  • 1/4 tsp sea salt

  • 4 tablespoons avocado oil

  • 4 tsp vanilla essence

  • crushed pistachios for topping or sea salt flakes or your choice of toppings

Instructions:

  1. Combine together the tahini, maple syrup and vanilla essence. Add the almond flour, 1.5 cups of chopped dark chocolate and salt.

  2. Fold all ingredients and form a dough. Divide dough evenly into 70 small pieces. Roll them into small balls and place them on a parchment paper.

  3. Prepare a double boiler or bain-marie to melt the remaining chocolate with 4 tablespoons of avocado oil. This means to place one pot on top of another. You place water in the lower pot and heat it to barely a simmer. The steam from the lower pot gently heats the upper pot where the chocolate is gradually melting.

  4. Stir the melting chocolat until the chocolate is smooth.

  5. One at a time, drop each ball into the chocolate and once is well coated remove each ball by poking it with a toothpick.

  6. Place chocolate coated truffles back on the parchment paper and sprinkle it with pistachios or sea salt flakes.

  7. Chill for at least an hour in the fridge. Place it in the large glass baking dish covered with lid and store it in the fridge until you are ready to serve them.
