Kefir Cake with Berries and Lovage

Baking Pan: 26 cm in diameter stoneware circular pan

Ingredients:

  •  240 g all purpose flour

  • 100 g granulated birch sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp sea salt

  • 3/4 cup Ovino Kefir (sheep milk kefir)

  • 1 large egg

  • 1 tsp pure vanilla

  • 1/3 cup sunflower oil

  • 2 tablespoons fresh lovage plant, chopped (or dandelion leaves)

  • 3 cups of Berries (blueberries, strawberries, or raspberries) fresh or frozen

  • Ingredients to make streusel topping: only need 1/2 cup

    • 1 cup all-purpose flour

    • 1 cup birch sugar

    • 1/2 cup butter, chilled and cut up into small pieces

 Instructions:

  1. Preheat oven to 350ºF or 180ºC.

  2. Grease a 26 cm wide circular stoneware dish.

  3. To make streusel topping: Place all the ingredients in a medium-sized bowl and use your fingers to bring it all together. Work with the mixture until it's thoroughly combined and forms a rough sand and clumpy texture. Refrigerate until ready to use. Freeze left over for the next bake off.

  4. To prepare the berries for your dish, start by washing them thoroughly to remove any dirt or residue. Next, take the strawberries and carefully slice them into smaller pieces. After slicing, place the berries on a strainer to dry, ensuring excess water is removed. If you opt for frozen berries, it's advisable to partially defrost them before use to reduce additional moisture content in your recipe.

  5. In a medium bowl, whisk together flour, sugar, baking powder, baking soda and salt.

  6. In a small bowl, whisk together kefir, egg and vanilla. Pour into the flour mixture and add oil.

  7. Stir to combine. Spread into prepared baking stoneware.

  8. Sprinkle the top of the cake with chopped lovage and decorate with fruits over the top evenly.

  9. Sprinkle the top with streusel and bake for 50 minutes or until cake is golden and cake tester comes out clean. Let cool slightly.

  10. Cut the beautifully decorated cake with precision, and joyfully serve generous slices to your beloved mom. This delightful dessert is the perfect choice to honor and celebrate mothers around the globe for their unconditional love and unwavering support.
