Ontario Dinner: Chicken and Peach Curry

PEACHES: One of the greatest pleasures of living in the beautiful Niagara Peninsula is the delightful experience of enjoying fresh, ripe peaches during their peak season. If you are fortunate enough to have your own peach tree or trees in your backyard, you could simply walk out the back door of your home and pick succulent, sun-warmed peaches that could be meticulously sliced for a refreshing snack or transformed into a lovely pie for dessert or any number of other delicious dishes. Peaches, along with various other fruits, were cultivated in the fertile soils of the Niagara Peninsula as early as 1790, a practice believed to have been introduced by Count de Boussaye, a French émigré who recognized the area's potential for fruit production.

Missing our beloved peaches during the long winter months can be quite challenging. Thankfully, we have the option to buy frozen Canadian peaches, which allow us to recreate this delicious recipe and make it taste just as delightful as when fresh peaches are in season. Here in Canada, we do indeed have a taste for a hint of sweetness combined with our savory meats, which enhances the overall flavor of our dishes.

CURRY: Just a generation ago, ‘curry’ meant one singular thing to most of us living in Canada: it was simply a yellow-coloured powder sitting in the spice rack that was occasionally added to enhance dishes like stew, chicken salad, or devilled eggs. We now know that curry can actually encompass any variety of unique spice combinations that create an endless array of delicious and distinct flavours, ranging from a fragrant Thai red or green curry to a rich and creamy chicken korma. The chicken and peach curry is a delightful, mild curry dish that brings warmth and comfort to any table. It is not only easy to prepare but also incredibly quick to prepare, making it an excellent choice for both busy weeknights and leisurely weekends.

Chicken and Peach Curry Recipe

Yield: 6 servings

Ingredients:

  • 850 g Yorkshire Valley Farms Boneless and Skinless Chicken, cut into 2.5 cm pieces

  • 4 tablespoons cooking oil, peanut or olive oil

  • 1 large onion, diced

  • 2 fresh garlic cloves, minced

  • 1 piece of fresh ginger : (2 Tablespoons) finely chopped

  • 4 tablespoons Thai Red Curry Paste, mild option

  • 400 ml coconut milk

  • 2 cups fresh or frozen peaches, peeled and cut into wedges

  • cooked jasmine rice or rice of your choice

Instructions:

  1. Heat a large skillet over medium heat and add oil. When shimmering, add chicken and cook until lightly golden brown, about 10 minutes. Remove the chicken and transfer to a bowl, setting aside.

  2. Add the onion to the skillet and cook over medium heat for 5 to 10 minutes until it's lightly browned. Then, mix in the ginger and garlic, cooking for another minute to blend the flavors. Next, stir in the curry paste, making sure it combines well with the other ingredients, and cook for another minute or so.

  3. Slowly mix in the coconut milk, a little at a time, for a smooth blend. Bring it to a gentle boil so the flavors combine. Then, lower the heat and add the chicken back into the pan. Let it simmer for about 10 minutes until the chicken is fully cooked and tender. Next, add the fresh peaches and stir gently, cooking for another 5 minutes to thicken the sauce and boost its flavor.

  4. Serve on bed of rice and with bouquet of vegetables. Enjoy it!💔
