Yukon: Great Canadian Potato Salad

Great Canadian Potato Salad

Yield: 12 servings
Ingredients:
1.25 g Yukon Gold Potatoes
3 hard-cooked eggs, egg whites diced + egg yolks finely shredded
1 celery stick, small diced
3 green onions, thinly sliced
3 medium pickles ( mustard cornichons or fermented pickles ), chopped
pinch sea salt, use in moderation
1/8 tsp white pepper
250 ml mayonnaise
2 tablespoons Dijon mustard
2 tablespoons pickle juice or juice of 1 lemon
Radish and parsley for garnish
Instructions:
Scrub the potatoes and boil in skin until tender. Do not overcook.
Drain the potatoes . Leave in colander or spread on a large plate until cool enough to handle
Peel the warm potatoes. Cut into 1cm dice. Set aside in the glass bowl.
Prepare the other ingredients needed for the recipe. Begin by boiling the eggs until they are hard-cooked, then proceed to chop the pickles, celery and green onions.
Once the hard-boiled eggs are cool, peel them and separate the egg whites from the yolks. Dice the egg whites into small pieces and shred the yolks finely.
Whisk mayonnaise with sea salt, white pepper, pickle juice, Dijon mustard, and shredded egg yolk until smooth.
Pour mayonnaise sauce over the potatoes, add egg whites, celery and green onion. Mix carefully until evenly blended.
Chill until ready to serve.
Garnish with radishes and parsley or chives.
